Semiya Vermicelli  ½ cup
sugar ½ cup
water 2 cups
milk ½ cups
Clarified butter (ghee) 2 teaspoon
Cashew nuts 6
Raisins  12 (as per taste)
Cardamom (crushed)
salt Pinch

Recipe – 

  1. In a pan, heat the ghee (clarified butter) and roast the vermicelli until they turn brown. Keep them aside
  2. In the same pan, roast the cashews and raisins until they turn golden. Set them aside as well.
  3. In a separate pot, bring the milk to a gentle boil and let it simmer until it reduces slightly.
  4. Add the roasted vermicelli to the milk and let it cook until the vermicelli becomes soft and absorbs the milk.
  5. Now, add the sugar and saffron strands to the mix and stir well until the sugar dissolves.
  6. Toss in the roasted cashews, raisins, and fragrant crushed cardamom.
  7. Let the flavours meld for a few more minutes, and your Semiya Payasam is ready!
